Colin’s favorite vinaigrette recipe is just too good to be kept our little secret any longer! We pulled this dinner staple from Colin Cowie Chic and can’t emphasize how fabulous it is. There are a handful of basic ingredients and a ton of ways to customize them based on your preferences! Take a look at the recipe below:

Vinaigrette Base Ingredients

  • 1 cup olive oil
  • ¼ cup vinegar
  • Salt and pepper to taste
  • 1 Tablespoon Dijon mustard
  • Well-chopped shallots


  1. Combine vinegar, salt, peppep, Dijon mustard and shallots.
  2. Pour in olive oil while whisking.

Substitutions and Additions

Light- For a lighter dressing, use vegetable oil instead of olive
Heavy- Change to ¼ cup truffle oil, ¾ cup vegetable oil, 1/4 cup vinegar
Nutty- Consider adding hazelnut or walnut oil for a nutty flavor
Pungent- Add a clove of minced garlic instead of shallots
Sweet- drizzle ½ tablespoon honey
Rich- add pureed artichoke hearts or a tablespoon of stilton cheese

Vinaigrette Uses

Salad dressing
Glaze for baked or barbecued chicken
Marinade for grilled shrimp
